The chive flowers are bursting with color right now. As I have been admiring these from the back porch and thinking about preserving chives this year it occurred to me...make something from the flowers. So chive blossom vinegar it is.
This isn't something that I'll be preserving for a much later date, but it was too easy not to try. And I think it will make a great addition to homemade salad dressing. I've never made this before, so we'll see if it's any good in two weeks once the steeping part is over. This was all there was to it:

- Wash blossoms a number of times (mine were really loaded with little bugs) and pat dry
- Fill a quart jar 3/4 full of blossoms
- Pour white wine vinegar over the blossoms to the top of the jar and seal
- Store in a dark, cool place for 2 weeks before straining and pouring into a clean jar
We'll see how this turns out!
