Last October I planted a bed of spinach and micro greens after pulling up all the old summer cucumber vines. Come early winter whatever was left of the micro greens died off. I started ignoring the spinach during the heart of winter, but it still held on and I think I even saw it wink at me one cold Saturday morning. Never give up on spinach. This spring I have incorporated that die-hard into everything possible...salads, egg sandwiches, omelets, stir-fries. I thought I could eat it all down, but nope. I've reached a point where I need to start getting that same bed ready for bean planting, so yesterday the spinach had to go.
I ended up with 2.5 pounds of spinach. Doesn't sound like much, but it overfilled both sides of my kitchen sink. I washed it all twice and then cut into smaller pieces. I blanched for 2 minutes, dunked into cold water, drained, blotted dry, and froze. I ended up with 8 sandwich baggies full within a gallon freezer bag. Not bad!
This will be a perfect addition for hearty soups.
