On September 17th, Intimidating Minnow and I started an elderberry/blackberry wine and an apple wine. We had set aside frozen juice from foraged and bartered fruit for the specific purpose of wine making until we had everything needed for both batches. On October 3rd, we racked the must into the gallon glass jugs for secondary fermentation. (I am behind on my blog obviously.) We were surprised at how little sediment there was while racking, so it's possible that we get the full 5 bottles of each wine.
At the end of October we will bottle and let the wine age for at least two months...just in time for winter!
There is another plan for more wine, and I hope one of the flavor combinations turns out nicely.
