There is certainly no shortage of apples for foragers. At least not around here. Looks at these beauties! These are the apples I picked while coming home from Kansas City the other day. They were growing in an easement one parking lot away from an IHOP. They are the biggest apples I've foraged, and I thought their color was beautiful...pastels of green and pink. If you could make an apple that represented the last kiss of summer, it would be this one.
And they are delicious.
So tonight I peeled the 9.5 pounds, cored, and sliced into 1/4" to 1/2" thicknesses. As I sliced, I soaked them in the cold water/crushed vitamin C tablets mixture that has been working very well at keeping the browning away. Then I drained and bagged into quart bags for the freezer.
3.5 quarts.
