The Romas are in full force. Last night I had 5.75 pounds to take care of. I simply blanched, peeled, and froze in quart bags. It ended up being 5 bags. These should be good for soups or sauces later.
I also saved the blanched peels and froze them. Last fall I started saving veggie scraps and herb stems to experiment with making my own vegetable broth, and I made some really good soups from it. So for sure I'm saving these things for my winter challenge also.
