This is one of my favorites. Herbed tomatoes are easy to make and can incorporate any herbs growing in the garden at the time. I had 4.5 pounds of ripened Romas and included I heaped teaspoon per jar of a chopped rosemary, thyme, and basil mixture. 4 pints of yum.
If you want to make a small batch of light chili in the winter, this is a great tomato component for it. In the past I've opened one of these jars, inserted a knife to make some cuts through the tomatoes while still in the jar, and poured the whole contents into my beans and meat.
Speaking of meat. Who hunts and wants to barter? Is fish chili a thing?

- Peel tomatoes (I submerge in simmering water for about 30 seconds, 4 Romas at a time to prep the skins for peeling. This is more time consuming than just a mass simmer in a large pot, but it's just how I like to do it.)
- Cut tomatoes in half lengthwise (if using Romas)
- Combine with just enough water to cover, boil gently for 5 minutes
- Add chopped herbs to hot sterilized jars, along with 1 Tbsp lemon juice and 1/4 tsp salt
- Pack tomatoes in jars, pour their hot cooking liquid over them to leave 1/2" headspace
- Process 40 minutes
