I'm nearing the end of my spearmint annihilation. Almost all of the rogue mint in the two small garden beds is gone. One large pot holds my transplanted reserves, so I just about have things under control. I don't regret growing it...it's so versatile and it's my favorite for tea.
Here is my mint status: 1 quart of dried leaves, another 1 quart of leaves drying currently, 6 half pints of mint jelly, and about 30 cups of leaves in the fridge. For the remaining 30 cups of leaves...I'm not sure yet. I'm thinking mint syrup and frozen iced mint tea or slush. Tell me your ideas if you have any. I'll probably have to deal with that tomorrow.
Anyway, this mint jelly I made tonight is great! I didn't add the green food coloring like most store bought kinds include. I think the natural steeped mint color is perfect. If you're interested in making some for yourself, use the same exact recipe and process I used for the redbud and forsythia jellies. Easy.
